I’ve made dhal many times, but I’ve never quite got it right. I’m going to try Iris’s Dhal next. The fact that it has some history behind it makes it even more interesting. I had a Trinidadian grandmother-in-law who made some treats that my wife’s parents don’t (mostly stuff they think is less healthy, like fry bake and aloo pie). I can relate to the feeling of chasing the past in a stew pot or fry pan.
Also, shout outs to Simply Trini (recipe site you linked). I’ve tried some recipes there and they were all good, although I hate how they keep reorganizing the site and making everything hard to find. cookingwithria.com Is another good one for Trini cooking.
Also, I hope we are talking black cake next winter!
